Start it in the morning and it will be ready for dinner. You can serve it over Basmatti rice, or eat alone as a soup.Ingredients for 2 servings2/3 cup Yellow lentils 1 cup water 2/3 chicken breast, cubed 2/3 chicken bouillon cubes 1/3 onion, minced 1 clove garlic, minced 1/3 (15 ounce) can diced tomatoes with juice or fresh tomatoes, equivalent 2/3 teaspoon curry powder 1/4 teaspoon cumin 1/4 teaspoon cinnamon 1/16 teaspoon nutmeg 1/4 teaspoon ground coriander 1/4 teaspoon ginger 2 teaspoons white vinegar 8 teaspoons cilantro, chopped Salt and pepperPut all ingredients but the cilantro in the crock pot. Leave to cook overnight or start in the morning for dinner. Taste to season with salt and pepper and add fresh cilantro. stir and enjoy.
